Ricotta Gnocchi with Tomato, Mushrooms, Olives and Spinach.

Ingredients | Serves 3 

1 Packet Green Almond Foods frozen Ricotta Gnocchi
4 Tablespoons olive oil
1 x Garlic clove chopped
4 x Mushrooms
8 x s/d tomatoes
100g Kalamata olives
Handful of baby spinach

Method:

 

Step 1
Heat garlic, mushrooms, s/d tomatoes in oil until mushrooms are cooked, add olives and heat through. 

Step 2
Cook frozen gnocchi as per instructions, add into sauce and mix through spinach.
