Sweet Potato Gnocchi with Eggplant Sauce

Are you wondering “how do I make an easy pasta”? We’ve made it simple for you,  sharing a delicious recipe using our Green Almond Foods frozen Sweet Potato Gnocchi. Our gnocchi are gluten free and vegan friendly.

Ingredients | Serves 3 

1 Packet Green Almond Foods frozen Sweet Potato Gnocchi
6 Tablespoons olive oil
1 Small onion chopped
1 Clove garlic chopped
1 Large eggplant, diced into small pieces
1 Bottle tomato passata
Dried oregano & salt & pepper to taste

Method:

 

Step 1
Heat oil in frypan, add onion & garlic, once sizzling add in eggplant cook until starting to soften.

Step 2
Add in the tomato passata, Season to taste with dried oregano, salt & pepper. Simmer for approx. 1/2 hour, if drying up add a little water.

Step 3
Cook frozen gnocchi as per instructions and add into sauce.
