Ricotta Gnocchi with Napoli Sauce
Ingredients:
- 500g of Green Almond Foods frozen Ricotta Gnocchi
- Drizzle of olive oil
- 1 clove of garlic
- 1 small onion, diced
- 250ml of tomato passata
- Salt & pepper to taste
- Sprigs of basil and grated parmesan (to finish)

Method:
- In a saucepan fry up the garlic and diced onion with a splash of oil.
- Once the onions and garlic are aromatic, about 2-3 minutes, pour in the tomato passata and season with salt and pepper, stir to combine.
- Cook for approx 10 mins, add a little water if drying up
- Fill a large pot with 3L of water and once at boiling point add in a pinch of salt.
- Pour in 500g (1 packet) of Green Almond Foods frozen Ricotta Gnocchi, stir gently and cover.
- The gnocchi are ready when they start to float to the top of the water, which takes about 3-5 minutes, promptly scoop them out and add them to tomato sauce. Stir through sauce.
- To finish garnish with grated parmesan cheese and a sprig of basil.
